Harvest Shepard's Pie

Serves 2

Ingredients

  • 5 small russet potatoes (or 2 large)
  • 1 cup sweet peas
  • 1 cup sliced carrots
  • 1 cup sliced zucchini
  • 2 cups sliced white button mushrooms
  • 2 1-ounce packages of Simply Organic Vegetarian Brown Gravy Mix
  • 1 tablespoon coconut oil
  • 1 tablespoon butter (or plant-based product)
  • 1 pinch paprika
  • dash of salt and pepper

Directions

  1. Peel potatoes and add to boiling water for 20 minutes.
  2. Heat coconut oil in skillet.
  3. Lightly saute carrots, zucchini and mushrooms until tender.
  4. Steam or boil peas until tender.
  5. Cook gravy mix as directed on package.
  6. Mash and lightly salt potatoes and scoop into center of dish.
  7. Surround potatoes with vegetables and gravy.
  8. Garnish potatoes with paprika, pepper and plant-based butter.
