
Ingredients
- 5 small russet potatoes (or 2 large)
- 1 cup sweet peas
- 1 cup sliced carrots
- 1 cup sliced zucchini
- 2 cups sliced white button mushrooms
- 2 1-ounce packages of Simply Organic Vegetarian Brown Gravy Mix
- 1 tablespoon coconut oil
- 1 tablespoon butter (or plant-based product)
- 1 pinch paprika
- dash of salt and pepper
Directions
- Peel potatoes and add to boiling water for 20 minutes.
- Heat coconut oil in skillet.
- Lightly saute carrots, zucchini and mushrooms until tender.
- Steam or boil peas until tender.
- Cook gravy mix as directed on package.
- Mash and lightly salt potatoes and scoop into center of dish.
- Surround potatoes with vegetables and gravy.
- Garnish potatoes with paprika, pepper and plant-based butter.
