Ingredients
3 cups cooked jasmine rice (preferably day-old)
3 tbsp vegetable oil
2 eggs, beaten
1 small onion, finely chopped
3 cloves garlic, minced
1 tbsp fresh ginger, minced
1 cup frozen mixed vegetables (peas, carrots, and green beans)
3 tbsp soy sauce (or tamari for gluten-free)
2 tbsp oyster sauce
1 tbsp sesame oil
4 green onions, chopped
Salt and pepper, to taste
Optional: 1 cup cooked and diced protein (chicken, shrimp, or tofu)
Directions
Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat. Pour in the beaten eggs and scramble until fully cooked. Remove eggs from skillet and set aside.
Add the frozen mixed vegetables to the skillet and cook for 3-4 minutes, until heated through.
Increase the heat to high and add the cooked rice to the skillet, breaking up any clumps with a spatula. Stir-fry the rice for 2-3 minutes.
In a small bowl, mix together soy sauce, oyster sauce, and sesame oil. Pour the sauce mixture over the rice and vegetables, stirring well to combine.
Add the scrambled eggs back into the skillet and mix everything together. If using an optional protein, add it now and cook for an additional 2 minutes.
Stir in the chopped green onions, salt, and pepper to taste.
