Oaxaca Cucumber & Tomato Salad

Serves: 2-3

Ingredients

  • 1 large cucumber, pared and finely chopped
  • 2 cups shredded cabbage
  • 1 large tomato
  • 1 large sweet pepper
  • A few drops of onion juice

Directions

  1. Soak shredded cabbage in cold water for one hour.
  2. Scald, peel and finely chop tomato.
  3. Remove seeds from sweet pepper, chop and mix with the tomato.
  4. When ready to serve, drain and dry the cabbage.
  5. In a salad bowl, add a layer of cabbage, a layer of cucumber, a layer of tomato, and a layer of pepper.
  6. Sprinkle with a few drops of onion juice.
  7. Repeat another layer until ingredients are used.
